Description

Cousin Lorene Freggiaro created this light, delicious sauce to treat our guests at Pizza Expo ’95. Made with our Alta Cucina® Plum Tomatoes, it is delicious served over capellini or atop crostini as an appetizer.

Makes about 3 cups.

Ingredients

2 tablespoons extra-virgin olive oil
1/2 cup chopped green onions
3 tablespoons capers, drained
2-1/4 cups coarsely chopped and drained Alta Cucina® Plum Tomatoes

Directions

Lightly sauté onions and capers in olive oil, just enough to blend flavors.

Gently fold in chopped, drained Alta Cucina® Plum Tomatoes.

Serve over capellini as a light main dish, or atop crostini as an appetizer.
