Long Island Grandma Pizza Sauce

Description

Long Island Grandma pie is a bit thinner than traditional Sicilian. The dough is formed on top of an oiled sheet pan. Mozzarella cheese is placed on top, then toppings. The sauce is added in dollops before the pie is baked.

Makes 9 1⁄4 cups of sauce.

Ingredients

1 can Alta Cucina® Plum Tomatoes, drained
1⁄2 cup Corto® Extra Virgin Olive Oil
8 cloves fresh garlic, minced fine
8 anchovy filets, in oil, drained and minced fine
20 basil leaves, chopped fine
salt & pepper to taste

Directions

Grind the Alta Cucina® Plum Tomatoes in a hand mill.

In a large stainless bowl add oil, garlic, anchovies, basil, and the coarsely ground tomatoes.

Add salt and pepper to taste.
